Amma's Poori with Potato Masala - Breakfast Staple


Poori masala remids me of so many memories from my childhood. Amma makes this only during weekends..And we as a litte kids will be waiting for weekends the whole week. Amma’s method of making poori is entirely different from mine. It was not the traditional one but taste so good with poori. She makes the masala little runnier, so that everyone gets a little of the gravy..

One more weird thing which she adds in all the korma is MILK..Yes, Amma adds milk in all the dishes. This gravy can be done in very less time than anyother curry. This is amma’s way of cooking stuffs. I am very glad to share my mom’s signature recipe with you all..Thanks Amma for giving the recipe to me..I LOVE YOU..

Amma's Poori Recipe

Ingrediants:

Wheat flour – 2 cup
Salt to taste
Oil- 1 tblspn
Water as needed

Method:

Mix all the ingrediants together except water.

Slowly add in the water and make a stiff dough.Let this rest for 15 mins.

Take a small portion from the dough and roll into thin poori.

Heat oil for deep frying and fry this till golden and puffed.

Remove on a paper towel and serve with curry


Amma's Potato Masala Recipe

Ingrediants:

Onion – 1 chopped
Potato – 3 large chopped
Green Chilli – 5 slit
Ginger – 1 tblspn minced
Turmeric powder – 1 tsp
Salt to taste
Milk – ½ cup
Oil  1 tblspn

Whole Spices:
Mustard Seeds / Kaduku – 1 tsp
Channa Dal /Kadala paruppu – 1 tblspn
Urad dal / Ulundu – 1 tblspn
Curry leaves – 1 spring

Method:

Heat oil and add in all the whole spices. Let them splatter for a min.

Add in onions, ginger, green chilli along with salt and turmeric.Cook for 3 mins..

Add in potatoes and mix well. Pour enough water to cover the potato. Bring it to boil and simmer for 20 mins.

Now once the potatoes are done..Switch off the flame and add milk.

Mix well and serve with poori.

Uttapam – Breakfast Recipes / Leftover Batter Recipes


Uttapam is my favorite..Traditionally it is made with the sour dosa batter which cannot be made into normal dosa, because it doesn’t taste that good..So if you have any leftover batter which is good for nothing you can try this out..Or you can leave dosa batter out over night and make the uttapam..It taste great that way or you can use normal dosa batter too..So hope you will try it out and let me know how it turned out for you..



Uttapam Recipe

Ingrediants:

Dosa Batter ( For recipe click here)
Salt to taste
Oil for pan frying dosa

For tempering:
Sambar Onion / Shallots – 1 cup chopped
Mustard Seeds / Kaduku – 1 tsp
Urad dal / Ulundu -1 tsp
Green Chilli – 2 chopped
Curry leaves – 1 spring
Oil – 1 tblspn

Method:

Heat oil. Add mustard and urad dal and allow them to pop. Add green chilli and curry leaves and fry for a min.Add onions and sauté for 1 min.

Add this to the batter and mix well.

Heat a tawa. Pour a ladleful of the batter and drizzle with some oil around the sides and let it cook untill it gets crisp. Flip them over and cook on other side too..

Serve with coconut chutney..

Indian Style Egg Omelette / Egg Omelet – Quick Side Dish of Rice / Combo with Rice & Rasam / Combo with Bread


This is my favorite dish when it comes to instant calmer..If I am having this for breakfast, I have it with toasted bread. For lunch Rice, Rasam and this together taste like heaven....I hope you will try it and let me know what you think..



Indian Style Egg Omelette Recipe

Ingrediants:

Egg – 3
Onion -1 chopped finely
Coriander Leaves / Cilantro – 2 tblspn chopped
Green Chilli -1 chopped finely
Chilli Powder -1/2 tsp
Pepper Powder – ½ tsp
Turmeric Powder / Manjal Podi -1/2 tsp
Water -2 tblspn
Salt to taste
Oil-1 tsp

Method:

Mix everything given in the list except oil and beat till just combined.

Heat oil in a non stick tawa and pour a small portion over that.

Cook for 2 mins on one side flip over and cook for a min on the other side.

Remove to a plate and serve with rice and rasam.

Instant Idli Upma – Quick Breakfast Recipes / Leftover Idli Recipes


This is the quick recipe which I always have when I am feeling so hungry..A great way to use left over idlis..It can be made within 10 mins..So try this tell me how it cameout..



Instant Idli Upma Recipe
 
Ingrediants:

Idlis– 10 crumbled
Idli Podi – 3 tblspn ( you can find this in super market)
Chilli Powder -1 tsp
Mustard Seeds / Kaduku -1 tsp
Onion-1 chopped finely
Salt –as needed
Oil-1 tblspn
Coriander leaves for garnishing

Method:

In a mixing bowl add crumbled idli, along with idli posi, chilli powder, salt and mix well.

Heat 1 tblspn oil and add mustard, onion and mix well.Fry this for 1 min.

Add in the crumbled idli mixture and mix well. Let it cook for 3 mins.

Garnish with coriander leaves and serve..

Instant Vermicelli Dosa / Semiya Dosa - Quick Breafast


Instant breakfast dish that need so less time to make..It is a great variation from your regular dosa which kids will surely love it..Make this batter the day before and put in fridge, this saves your time..

Batter can be made in advance and kept in fridge till use..
Taste best with coconut chutney

Instant Vermicelli Dosa Recipe

Ingrediants:

Vermicelli / Semiya – 1 cup cooked and drained
Rawa / Semolina / Sooji -  ½ cup
Rice Flour / Arisi mavu – ½ cup
Curd – 1 cup
Green Chilli- 1 finely chopped
Onion-1 finely chopped
Turmeric Powder / Manjal Podi -1 tsp
Salt to taste
Sugar – 2 tsp
Water as needed
Oil for pan frying
 
Method:

Mix rawa, rice flour, curd, onions, chillies, turmeric, salt, sugar and water in a mixing bowl.

The batter should be like dosa batter consistency. Set this aside for 15-20 mins.

Now add the cooked vermicelli in this and mix well. If the batter is too thick add some more water.

Heat a tawa and pour one ladle of batter and make dosas..

Drizzle with oil and cook on both sides till crispy and golden brown.

Remove it and serve with chutney.
