Amma's Bittergourd Poriyal / Pavakkai Poriyal - Quick Sidedish for Rice / Diabetic Recipes


A yummy poriyal which is so healthy but never taste like bittergourd...I am sure you will love it..




Amma's Bittergourd Poriyal Recipe

Ingrediants:

Bittergourd / Pavakkai - 1 chopped finely
Onion - 1 chopped finely
Green Chilli - 1 chopped finely
Chilli powder - 1 tsp
Salt to taste
Sugar - 1 tsp
Oil-  4 tblspn

Method:

Heat oil in a  kadai. Add onion,green chilli and pavakkai and saute this for 3 mins.

Add in salt and chilli powder and mix well. Cook this on a low flame covered for 15 mins. Mix often.

Add sugar to taste and mix well. Add more oil if needed.Cook it for 5 more mins.

Serve with rice..

Amma’s Quick Potato Roast / Potato Poriyal – Sidedish for Rice


Amma does everything so quick and simple..She has lots of mouth watering recipe, but they hardly take anytime to cook..That is the beauty of her cooking.This is one such dish that takes only minutes to cook..She makes this more often like 3 to 4 times a week, since this is our favorite..Having this with hot rice and rasam is like heaven..I hope you will love it and let me know what you think..



Amma’s Quick Potato Roast Recipe

Ingrediants:

Potato – 2 large Peeled and chopped
Chilli powder – 1 tsp
Salt to taste
Mustard Seeds / Kaduku – 1tsp
Oil- 2 tblspn

Method:

Heat 1 tblspn of oil in a kadai. Add mustard seeds and allow them to pop..

Now add potatoes and mix well. Add salt and chilli powder and mix well.

Add a splash of water and cover it with a lid for around 15 mins till the potatoes are cooked.

Now add 1 tblspn of oil and roast the potatoes on high flame till it gets nice colour.

Serve hot with rice and rasam.

Marchini Kilangu Kootu / Tapioca Curry / Kappa Kootu Curry

This is one of my favorite curry..One of our family friend, she is a mallu..She makes this curry so good..Whenever she tries this out, she send me a bowl full of this along with meen kulambu/ fish curry..It taste like heaven.. I asked her the recipe and tried it myself. It cameout pretty good..Here you go to the recipe..


Marchini Kilangu Kootu Recipe
 
Ingrediants:

Tapioca / Marchini Kilangu – 1 big one peeled and cubed
Salt to taste
Turmeric Powder / Manjal Podi – 1tsp

For grinding:
Coconut – ½ cup
Shallots / Sambar Onion – 4
Garlic – 4 pods
Cumin Seeds / Jeerakam – 1 tsp
Green Chilli – 3

For Tempering:
Coconut Oil- 1 tblspn
Mustard Seeds / Kaduku – 1tsp
Curry leaves – 1 spring

Method:

Grind the ingrediants given in the list to a smooth paste by adding some water.Set this aside for a moment.

Take a kadai. Add cubed tapioca and cover it with some water. Add salt and turmeric and mix well. Bring it to boil and simmer it for 20-25 mins untill cooked.

Now add in the ground masala and mix well. Simmer for 3 mins.

Heat oil and add mustard and curry leaves. Pour this over the curry and mix well.

Serve with rice and fish curry.

Amma’s Avarakkai Avial / Broad Beans Avial / Broad Beans cooked in a Coconut Paste- Sidedish for Rice

 
I am not a big of this broad beans when I was little. But amma makes this for us often..she says that this veggie is filled with lots of fiber and it is so good for you..We started eating this and it was pretty good..Hope you try it and let me know what you think..


Amma’s Avarakkai Avial Recipe

Ingrediants:

Avarakkai / Hyacinth Beans/ Broad Beans – 1 cup prepared and chopped
Salt to taste
Water to cook avarakkai

For Grinding:
Coconut – ¼  cup
Turmeric Powder / Manjal Podi – 1tsp
Cumin Seeds / Jeerakam– 1 tsp
Shallots / Sambar Onion – 3 peeled
Dry Red Chilli - 2

For Tempering:
Oil- 1 tblspn
Mustard Seeds / Kaduku -  1tsp
Urad dal / Ulundu -1 tsp
Curry leaves – 1 spring

Method:

Grind the ingrediants given in the list to a paste by adding some water.

Take avarakkai in a kadai and add some salt and water and cook it for 15 mins untill done.

Add the grind paste and mix well. Cook for 5 more mins.

Now heat oil add the tempering ingrediants and mix well.

Pour this over the avial and mix well.

Serve hot with rice.

Amma's Cucumber Pulikari / Velarikai Thengai Kulambu / Cucumber Cooked in Coconut Sauce


This is a gravy which hardly takes any time to cook..So amma makes it more often than anything else. You can use any vegetable of your choice. You could add ladysfinger, pumpkin, shallots or drumstick, brinjal and make this..Hope you like it..


Amma's Cucumber Pulikari 

Ingrediants:

Cucumber -1 cup deseeded and chopped
Salt to taste
Water to cook cucumber

For Grinding:
Coconut – ½ cup
Turmeric Powder / Manjal Podi -1 tsp
Shallots / Sambar Onion – 3 peeled
Cumin Seeds / Jeerakam – 1tsp
Dry Red Chilli - 2

For Tempering:
Oil- 2 tblspn
Mustard Seeds / Kaduku – 1tsp
Urad Dal / Ulundu -1 tsp
Shallots / Sambar Onion – 3 chopped finely
Curry leaves – 1 spring

Method:

Grind all the ingrediants given in the list to a fine paste by adding some water.

Take cucumber in a kadai and add salt and water. Cover and cook for 10 mins untill cooked.

Now add in the ground masala paste along with some water to make the gravy.

Bring it just a single boil. Don’t let it boil over. Switch off the flame.

Make tempering by adding all the ingrediants to oil and pour this over the gravy.

Mix well and serve with rice.

This is a healthy yet tasty dish which can be served with rice..I can assure you that it can be made with in 15 mins. Amma makes this for us often, since it is so healthy……So please try this yummy dish..Hope you like it..


Keerai Thoran Recipe

Ingrediants:

Spinach / Palak (any spinach) / Keerai – 3 cups chopped
Salt to taste
Water to cook spinach

For Grinding:
Coconut – ½ cup
Garlic – 2 cloves
Shallots / Sambar Onion – 2 peeled
Turmeric Powder / Manjal Podi -1 tsp
Dry Red Chilli – 2

For Tempering:
Oil- 1tblspn
Mustard seeds / Kaduku -1 tsp
Urad Dal -1 tsp

Method:

Grind all ingrediants given in the list to a fine paste.

Add spinach to a kadai along with salt and water and cook for 5 mins.

Now add in the ground masala and mix well. Cook for 5 more mins.

Now heat oil and add mustard and urad dal and mix well. Pour this over the gravy and mix well.

Serve hot with rice

Keerai Masiyal – Healthy Sidedish for Rice


This is what amma made for us when we are kids..She used to make this atleast 2 times a week. A really really tasty dish which is extremely healthy too..Hope you like it..


Keerai Masiyal Recipe

Ingrediants:

Spinach (any variety ) – 1 bunch
Shallots / Sambar Onion - 3
Garlic – 5 cloves
Ghee – 1 tblspn
Salt to taste

Method:

Wash the spinach well and chop into small pieces. Take it in a pan and add about a cup of water.

Add in salt, garlic, onion  and cook for 5 mins untill the spinach is cooked and completely wilted.

Now cool this down and take it in a blender and make into a fine puree.

Transfer to a bowl. Heat some ghee and pour over the top.

Serve this with hot rice..

Indian Style Egg Omelette / Egg Omelet – Quick Side Dish of Rice / Combo with Rice & Rasam / Combo with Bread


This is my favorite dish when it comes to instant calmer..If I am having this for breakfast, I have it with toasted bread. For lunch Rice, Rasam and this together taste like heaven....I hope you will try it and let me know what you think..



Indian Style Egg Omelette Recipe

Ingrediants:

Egg – 3
Onion -1 chopped finely
Coriander Leaves / Cilantro – 2 tblspn chopped
Green Chilli -1 chopped finely
Chilli Powder -1/2 tsp
Pepper Powder – ½ tsp
Turmeric Powder / Manjal Podi -1/2 tsp
Water -2 tblspn
Salt to taste
Oil-1 tsp

Method:

Mix everything given in the list except oil and beat till just combined.

Heat oil in a non stick tawa and pour a small portion over that.

Cook for 2 mins on one side flip over and cook for a min on the other side.

Remove to a plate and serve with rice and rasam.

Simple Potato Balls – Quick Sidedish for Rice


A simple yet crispy snack that is so easy to make..I had it with rice and rasam. It tasted divine..So here you go to the recipe.

Simple Potato Balls 

Ingrediants:

Potatoes – 3 large grated
Onion- 1 chopped
Rice Flour – 1 cup
Red Chilli Powder -1 tsp
Salt to taste
Water – 3 tblspn
Oil for Deep Frying

Method:

Take grated potatoes, onions, salt, red chilli powder in a bowl.

Add rice flour and mix well. Sprinkle some water and mix everything together.

Heat oil for deep frying. Form small balls out the potato mixture and drop in oil.

Fry till golden brown.

Drain in a paper towel.

Serve hot with rice or as a snack.

Simple Brinjal Fry – Quick Sidedish for Rice


This is one of the quick dish that can be made in minutes..It calls for minimum ingrediants but taste extraordinary..You can have it with plain rasam sadam. I hope you love it.

Simple Brinjal Fry Recipe

Ingrediants:

Brinjal – 3 sliced thinly in circles
Rice Flour / Arisi Mavu – 4 tblspn
Gram Flour / Kadalai Mavu / Besan – 1tblspn
Red Chilli Powder-1 tsp
Salt to taste
Water – 3 tblspn
Oil for deep frying

Method:

Mix everything except oil in a mixing bowl.

Heat oil for deep frying. Drop brinjals one by one in oil and fry till golden and crispy.

Drain in a paper towel.

Serve hot with rice.
