Amma's Poori with Potato Masala - Breakfast Staple


Poori masala remids me of so many memories from my childhood. Amma makes this only during weekends..And we as a litte kids will be waiting for weekends the whole week. Amma’s method of making poori is entirely different from mine. It was not the traditional one but taste so good with poori. She makes the masala little runnier, so that everyone gets a little of the gravy..

One more weird thing which she adds in all the korma is MILK..Yes, Amma adds milk in all the dishes. This gravy can be done in very less time than anyother curry. This is amma’s way of cooking stuffs. I am very glad to share my mom’s signature recipe with you all..Thanks Amma for giving the recipe to me..I LOVE YOU..

Amma's Poori Recipe

Ingrediants:

Wheat flour – 2 cup
Salt to taste
Oil- 1 tblspn
Water as needed

Method:

Mix all the ingrediants together except water.

Slowly add in the water and make a stiff dough.Let this rest for 15 mins.

Take a small portion from the dough and roll into thin poori.

Heat oil for deep frying and fry this till golden and puffed.

Remove on a paper towel and serve with curry


Amma's Potato Masala Recipe

Ingrediants:

Onion – 1 chopped
Potato – 3 large chopped
Green Chilli – 5 slit
Ginger – 1 tblspn minced
Turmeric powder – 1 tsp
Salt to taste
Milk – ½ cup
Oil  1 tblspn

Whole Spices:
Mustard Seeds / Kaduku – 1 tsp
Channa Dal /Kadala paruppu – 1 tblspn
Urad dal / Ulundu – 1 tblspn
Curry leaves – 1 spring

Method:

Heat oil and add in all the whole spices. Let them splatter for a min.

Add in onions, ginger, green chilli along with salt and turmeric.Cook for 3 mins..

Add in potatoes and mix well. Pour enough water to cover the potato. Bring it to boil and simmer for 20 mins.

Now once the potatoes are done..Switch off the flame and add milk.

Mix well and serve with poori.

Amma's Bittergourd Poriyal / Pavakkai Poriyal - Quick Sidedish for Rice / Diabetic Recipes


A yummy poriyal which is so healthy but never taste like bittergourd...I am sure you will love it..




Amma's Bittergourd Poriyal Recipe

Ingrediants:

Bittergourd / Pavakkai - 1 chopped finely
Onion - 1 chopped finely
Green Chilli - 1 chopped finely
Chilli powder - 1 tsp
Salt to taste
Sugar - 1 tsp
Oil-  4 tblspn

Method:

Heat oil in a  kadai. Add onion,green chilli and pavakkai and saute this for 3 mins.

Add in salt and chilli powder and mix well. Cook this on a low flame covered for 15 mins. Mix often.

Add sugar to taste and mix well. Add more oil if needed.Cook it for 5 more mins.

Serve with rice..

Amma’s Quick Potato Roast / Potato Poriyal – Sidedish for Rice


Amma does everything so quick and simple..She has lots of mouth watering recipe, but they hardly take anytime to cook..That is the beauty of her cooking.This is one such dish that takes only minutes to cook..She makes this more often like 3 to 4 times a week, since this is our favorite..Having this with hot rice and rasam is like heaven..I hope you will love it and let me know what you think..



Amma’s Quick Potato Roast Recipe

Ingrediants:

Potato – 2 large Peeled and chopped
Chilli powder – 1 tsp
Salt to taste
Mustard Seeds / Kaduku – 1tsp
Oil- 2 tblspn

Method:

Heat 1 tblspn of oil in a kadai. Add mustard seeds and allow them to pop..

Now add potatoes and mix well. Add salt and chilli powder and mix well.

Add a splash of water and cover it with a lid for around 15 mins till the potatoes are cooked.

Now add 1 tblspn of oil and roast the potatoes on high flame till it gets nice colour.

Serve hot with rice and rasam.

Amma’s Quick Vegetable Briyani – Lunch Box Ideas


Briyani is my favorite..I make it completely in a different way..But amma is a speedy master..She make this in less than 30 mins..This can be put in lunch box for kids..They will love it for sure..Hope you like it..



Amma’s Quick Vegetable Briyani 

Ingrediants:

Rice – 1 cup (any rice of your choice)soaked for 30 min.
Carrot – 1 chopped
Potato – 1 peeled and chopped
Beans -5 chopped
Peas – ½ cup
Green Chilli - 4
Turmeric Powder / Manjal Podi -1 tsp
Chilli Powder – 1tsp
Cinnamon / Pattai – 1 small stick
Cardamom / Yelakai – 5
Salt to taste
Oil- 1 tblspn
Ghee – 1 tblspn
Coriander Leaves / Cilantro – for garnishing

Method:

Take a pressure cooker. Add oil and ghee and heat it up. Add cinnamon and cardamom and mix well.

Add all vegetables, green chilli and mix well. Fry for 3 mins.

Add turmeric powder, chilli powder, salt and mix well.

Add rice and mix well. Pour in 3 cups of water ( if using basmati rice add 2 cups) and bring it to a boil. Simmer the flame and pressure cook it for 15 mins or for 3 whistles. Switch off the flame and allow the steam to escape on its own..

Garnish with cilantro and serve with raita.

Amma’s Avarakkai Avial / Broad Beans Avial / Broad Beans cooked in a Coconut Paste- Sidedish for Rice

 
I am not a big of this broad beans when I was little. But amma makes this for us often..she says that this veggie is filled with lots of fiber and it is so good for you..We started eating this and it was pretty good..Hope you try it and let me know what you think..


Amma’s Avarakkai Avial Recipe

Ingrediants:

Avarakkai / Hyacinth Beans/ Broad Beans – 1 cup prepared and chopped
Salt to taste
Water to cook avarakkai

For Grinding:
Coconut – ¼  cup
Turmeric Powder / Manjal Podi – 1tsp
Cumin Seeds / Jeerakam– 1 tsp
Shallots / Sambar Onion – 3 peeled
Dry Red Chilli - 2

For Tempering:
Oil- 1 tblspn
Mustard Seeds / Kaduku -  1tsp
Urad dal / Ulundu -1 tsp
Curry leaves – 1 spring

Method:

Grind the ingrediants given in the list to a paste by adding some water.

Take avarakkai in a kadai and add some salt and water and cook it for 15 mins untill done.

Add the grind paste and mix well. Cook for 5 more mins.

Now heat oil add the tempering ingrediants and mix well.

Pour this over the avial and mix well.

Serve hot with rice.

Amma’s Coconut Chutney / Thengai Chutney – Sidedish for Idli & Dosa


Coconut chutney is a staple one in each and every south indain home..Amma makes this along with idli or some dosa..It taste so good with that..Hope you like it and let me know what you think..



Amma’s Coconut Chutney Recipe

Ingrediants:

To Grind:
Coconut -1 cup
Green Chilli – 3
Garlic – 2 cloves
Curry leaves – 1 spring
Tamarind paste– 1 tsp
Salt to taste
Hot water as needed to thin the chutney

For Tempering:
Oil- 1 tblspn
Mustard Seeds / Kaduku – 1tsp
Channa Dal / Kadalai Paruppu -1 tsp
Urad Dal / Ulundu -1 tsp
Dry red Chilli – 1
Asafoetida / Hing / Kaya Podi - ¼  tsp
Curry leaves – 1spring

Method:

Grind all ingrediants given in the list to a fine paste by adding some water. Tranfer to a bowl.

Add hot water and mix well. Adjust the chutney consistency with that water.

Now make the tempering as given in the order and pour it over this chutney.

Mix well and serve with idli or dosa.
